A delicious, herby alternative to mash!

Serves

4-6

Ingredients

  • 1kg Potatoes 
  • 1 bunch spring onions
  • 1 bunch fresh herbs (any!)
  • salt
  • black pepper
  • olive oil 

Method

  1. Wash your potatoes and roughly chop them into cubes. Keep the skin on, and try to keep them fairly similar in size so that they cook evenly.
  2. Fill a large pot with water and generously salt. Add in your potatoes into the cold water, and bring to the boil. Cook until the potatoes are soft.
  3. Whilst they’re cooking, finely slice the spring onions and herbs. 
  4. Once the potatoes are cooked, drain them and return them to the pan. 
  5. Add a generous amount of salt, black pepper, olive oil and ¾ of the spring onion and fresh herb mix. 
  6. Roughly mash with a potato masher - you want to break down the potato a bit but you don’t want it to be like lumpy mash! 
  7. Mix the potatoes through with a spatula to make sure the herbs and seasonings are distributed evenly.
  8. Top with the rest of the herbs and spring onions and enjoy!

Serving Suggestion: Serve on the side of casseroles, pies, sausages and more!
