This easy, warming soup is the perfect comfort recipe for chilly days!
Ingredients
- 1 medium (or 2 small) pumpkin or squash
- 1-2 tablespoons oil (or butter)
- 1 onion, chopped
- 2-3 garlic cloves, minced
- 1 medium carrot, diced
- 1 medium potato, diced (for extra creaminess, optional)
- 4 cups vegetable or chicken stock
- 1 cup coconut milk, heavy cream, or milk (optional for creaminess)
- 1 teaspoon ground cumin
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon smoked paprika (optional, for a smoky flavor)
- Salt and black pepper, to taste
- Chili flakes or cayenne pepper (optional, for heat)
- Fresh herbs, like thyme or sage, for garnish
- Pumpkin seeds or croutons for topping
Method
Prepare the Pumpkin or Squash:
- Preheat your oven to 200°C.
- Cut the pumpkin or squash in half, scoop out seeds, and place the halves on a baking sheet (cut side down).
- Roast for 30-40 minutes, or until the flesh is tender and easy to scoop. Alternatively, peel and dice the squash to cook directly in the pot.
Cook the Base Vegetables:
- Heat the olive oil or butter in a large pot over medium heat.
- Sauté the onion, garlic, carrot, and potato until softened, about 10 minutes.
- Stir in your spices, eg cumin, nutmeg, and smoked paprika, cooking for another minute to release their aroma.
- Add the roasted pumpkin or squash flesh (or raw diced pieces) and pour in the stock.
- Bring to a boil, then reduce the heat and simmer for 20-25 minutes if using raw squash, or 10-15 minutes if pre-roasted.
- Use an immersion blender directly in the pot, or transfer the soup to a blender in batches, blending until smooth.
- Add Creaminess (Optional): Stir in the coconut milk, heavy cream, or milk. Adjust consistency with more stock or water if needed.
- Taste and adjust seasoning with salt, pepper, and optional chili flakes.
Serve and Garnish:
- Ladle the soup into bowls and garnish with fresh herbs, a drizzle of cream or olive oil, and a sprinkle of toasted pumpkin seeds or croutons.
Make it your own!
- Add a hint of sweetness with a tablespoon of maple syrup or honey.
- For extra depth, include a diced apple or pear during cooking.
- If you enjoy heat, finish with a dash of hot sauce or sprinkle cayenne on top.
