Corned Beef Hash

This corned beef hash recipe is a sure-fire way to fill hungry tummies quickly and easily!

Serves 4

Ingredients

  • 340g corned beef
  • 500g potatoes
  • 1 onion
  • 1 carrot
  • 1 tsp rosemary
  • 1 tsp oregano
  • 2 tbsp tomato paste
  • 340g can mixed beans
  • 3 cloves garlic

Method

Preheat your oven to 180C

Peel and roughly dice the potatoes. Lightly cover in oil, salt and epper and roast in the oven for 20 minutes

Heat the oil in a non-stick frying pan and cook th onion for 3-4 minutes over a medium heat. Add garlic, rosemary, oregano and tomato paste and fry for another 2 minutes.

Remove the potatoes from the oven and add the pan.

Add the corned beef and tine of mixed beans. Push down with a spatula to crisp up, cooking for about 5 minutes.

Turn the mixture over, trying not to break up the meat and potatoe too much. Cook for another 5 minutes until cripsed up.

Season to taste and serve!
